For example, the essential oil from orange peel can contain up to 98% D-limonene, giving a citrussy edge to the wine. Cloves are one of the key spices, imparting a spicy, aromatic flavour due to the presence of eugenol. In addition, cinnamon bark and nutmeg are commonly added to the infusion, contributing large amounts of cinnamaldehyde and sabinene, respectively.
